Choosing a Water-Bath Canner

The best water-bath canner is deep enough for safe water coverage, stable on your cooktop, easy to lift when empty, and sized for the jars in the tested recipes you plan to make.

Start with depth and a rack

  • The pot must hold a rack and the tallest approved jars with at least 1 inch of briskly boiling water above their tops.
  • Choose a rack that keeps jars upright and off the pot bottom.
  • Leave enough room to prevent vigorous boiling from spilling over.

Compare real-world fit

  • Cooktop compatibility and manufacturer weight limits
  • Flat, stable base sized appropriately for the burner
  • Jar capacity and the jar sizes you use most
  • Handle strength, lid fit, and safe empty-pot handling
  • Storage space and replacement-rack availability

Traditional water bath or atmospheric steam

A traditional boiling-water canner is the most versatile starting point. An atmospheric steam canner may be used only for acid foods with a tested boiling-water process whose altitude-adjusted time is 45 minutes or less, with jars preheated before filling and the canner maintained in pure steam for the full process. Follow current NCHFP and manufacturer instructions exactly.

Electric canners

For an electric boiling-water canner, verify that the manufacturer supports the jar size, food, recipe, altitude adjustment, and process you intend to use. An appliance’s “canning” label does not replace a tested process.

Use a tested process

Always use a current tested recipe from the National Center for Home Food Preservation, USDA, or a university Extension source. Follow the recipe’s food preparation, jar size, headspace, processing method, time, pressure, and altitude adjustment exactly.
